FOOD There is something wonderful about watching a professional oyster shucker work. They are so fast, so precise and they still have all ten fingers which given the rate at which they open oysters and the sharpness of the blades they use is something of a miracle. Freshly (meaning seconds before you eat them) shucked oysters can be very hard to find in Adelaide but at Samtass, one of the Adelaide Central Markets’ fishmongers they are happy to shuck you a dozen or two and they can be eaten there and then. South Australian oysters are in premium condition from end of March until end of October depending on the weather. At Samtass they come served plain with lemon, just like the Walrus said. BYO fresh buttered bread recommended.
Samtass also sell live oysters for those who have the skills to shuck themselves and are a far better option than buying them on Friday and eating them on Sunday.
