Olive’s dukka
salt cured black olives marinated with chilli and mint
semi–dried heritage tomatoes
4 leaf chick pea hommos
oven baked fresh cheese made with Paris Creek Biodynamic Milk

salad of chick peas with roasted beetroot and onions, herbs, hard boiled organic eggs
roasted sesame and garlic dressing

braised egg plant
local squid poached in heritage tomato sauce with herbs
confit farmed rabbit with hand made pasta and sage

Almond milk pudding
heritage dried apricot sauce

Ann Oliver has cooked since she opened Mistress Augustine’s Restaurant in 1981, stepping overnight from a career as technical illustrator and graphic artist to cook. Four years later she was miraculously (in her own words) awarded the Adelaide Advertiser Best Chef and working for a brief period at K–Paul’s Louisiana Kitchen with Paul Prudhomme then number 10 in America. The first woman to do estage in two three Michelin starred restaurants Les Crayeres and l’esperance and Harvey’s Marco Pierre White’s first one star Oliver has always approached learning about food and cooking in a completely fearless manner. To her taste is everything and it doesn’t come from hydroponic tomatoes or corn from Queensland it comes from food grown locally and cooked in season.

Thirty years later Ann continues to enjoy a celebrated career as chef, food writer, web designer and developer and artist. Her enduring passion for local and seasonal ingredients and knowing the people who grow, catch and kill the food she cooks has been fundamental since she started cooking.
